Anyone for Heart Warming Soup?






Good Wholesome Low Fat Recipes
A number of you have asked do I know of good low fat recipes and the answer is yes.

I have included a recipe below and please feel free to try it out and again I would welcome your comments, the recipe goes down particularly well with children and is a great way of them eating there vegetables so please give it a try.

This recipe is part of my Bespoke Nutrition Manual and can be purchased at the Bespoke Life Shop
 Spiced Lentil and Vegetable Soup (Serves 1, Increase ingredients for more people)

1tsp Vegetable or Olive Oil (Go Olive preferably)
1tsp Mild Curry Paste ( I use Pataks)
1 clove of garlic (Not the bulb) crushed and finely chopped
350ml (12fl oz ) vegetable stock ( I use Swiss Marigold, can buy from Tesco)
1 medium onion (Sliced)
30g (1 1/4oz) dried red lentils 
1 medium carrot, peeled and chopped
1 small parsnip, peeled and finely chopped
1 small potato, washed and chopped
1 medium stalk celery ( used potato peeler to take the outer layer of celery off) chopped
1tsp tomato puree

Heat oil in the pan, add curry paste and garlic and mix with spoon
Add boiling stock with tomato puree to the pan and stir.
Add all vegetables to the pan, stir and once it comes to the boil turn right down to simmer for 40-50 mins with lid on
Remove lid and puree the contents of the pan with an electric blender, stir and serve with crusty wholemeal bread

*Tip 
By blending only half the contents of the quantity you will get a nice thick soup but it will also be chunky as well.

Nutritional Information is based upon the soup only

220 Calories 6.8g fat. Sat fat is only 0.1g. Salt is 0.8g
